Vegan Vegetable Stir Fry


Ingredients: - 1 tablespoon olive oil - 1/2 onion, sliced - 1 garlic clove, minced - 1/2 red bell pepper, sliced - 1/2 yellow bell pepper, sliced - 1/2 zucchini, sliced - 1/2 cup sliced mushrooms - 1/2 cup broccoli florets - 1/2 cup snow peas - 1 tablespoon soy sauce - 1/2 teaspoon ginger powder - Salt and pepper to taste

Instructions: 1. Heat the olive oil in a large skillet over medium-high heat. 2. Add the onion and garlic and sauté for 2 minutes. 3. Add the bell peppers, zucchini, mushrooms, broccoli, and snow peas and sauté for 5-7 minutes or until the vegetables are tender. 4. Add the soy sauce, ginger powder, salt, and pepper and stir to combine. 5. Cook for an additional 2-3 minutes or until the vegetables are coated in the sauce. 6. Serve hot and enjoy!
