############# Ingredients: - 8 oz. of whole wheat noodles - 1/4 cup of low-sodium soy sauce - 1/4 cup of rice vinegar - 1/4 cup of water - 2 tbsp of maple syrup - 2 cloves of garlic, minced - 1 tsp of grated ginger - 1/2 tsp of chili flakes - 1 red bell pepper, sliced - 1 cup of broccoli florets - 1 cup of sliced mushrooms - 1 cup of shredded carrots - 1/4 cup of chopped scallions - 1 tbsp of sesame oil - 1 tbsp of cornstarch - 1/4 cup of water

############# Instructions: 1. Cook the noodles according to the package instructions. Drain and set aside. 2. In a small bowl, whisk together the soy sauce, rice vinegar, water, maple syrup, garlic, ginger, and chili flakes. Set aside. 3. Heat the sesame oil in a large skillet over medium-high heat. Add the red bell pepper, broccoli, mushrooms, and carrots. Cook for 5-7 minutes, or until the vegetables are tender. 4. In a small bowl, whisk together the cornstarch and water. Add the cornstarch mixture to the skillet and stir until the sauce thickens. 5. Add the cooked noodles to the skillet and toss to coat with the sauce. 6. Divide the noodle mixture into four bowls and top with chopped scallions. 7. Serve and enjoy your Spicy Vegan Noodle Bowl!
