Spanish Chicken and Vegetable Skillet

Instructions: 1. Heat the olive oil in a skillet over medium-high heat. 2. Add the chicken breast and cook for 3-4 minutes on each side, until browned and cooked through. Remove from the skillet and set aside. 3. In the same skillet, add the sliced peppers and onion. Cook for 5-7 minutes, until softened. 4. Add the minced garlic and cook for an additional minute. 5. Add the canned diced tomatoes, smoked paprika, dried oregano, salt, and pepper. Stir to combine. 6. Return the chicken breast to the skillet and spoon the vegetable mixture over the top. 7.
