Salmon and Egg Fried Rice

############## Ingredients: - 10 eggs - 500g salmon fillet, cut into small pieces - 5 cups cooked brown rice - 2 cups mixed vegetables (carrots, peas, corn) - 1 onion, chopped - 4 cloves garlic, minced - 2 tbsp olive oil - 2 tbsp low-sodium soy sauce - Salt and pepper to taste

Instructions: 1. In a large non-stick pan, heat olive oil over medium heat. 2. Add onion and garlic and sauté until fragrant. 3. Add salmon and cook for 5-7 minutes or until it turns pink. 4. Add mixed vegetables and cook for another 3-5 minutes. 5. Push the salmon and vegetable mixture to one side of the pan. 6. Crack the eggs into the other side of the pan and scramble them until cooked. 7. Mix the scrambled eggs with the salmon and vegetable mixture. 8. Add cooked brown rice and soy sauce to the pan and stir until well combined. 9. Season with salt and pepper to taste. 10. Serve hot.
