Ingredients: - 1 cup cooked white rice - 2 eggs - 1 tablespoon soy sauce - 1/2 red pepper, thinly sliced - 200 grams boneless chicken breast, thinly sliced - 1 tablespoon vegetable oil - Salt and pepper to taste - Optional garnish: sliced green onions

Step by Step Process: 1. In a small bowl, beat the eggs with a pinch of salt and pepper. Set aside. 2. Heat the vegetable oil in a large skillet or wok over medium-high heat. 3. Add the chicken slices to the skillet and cook until they are no longer pink in the center, about 5-6 minutes. Remove the cooked chicken from the skillet and set aside. 4. In the same skillet, add the sliced red pepper and cook for 2-3 minutes until slightly softened. 5. Push the red pepper to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until they are fully cooked. 6. Add the cooked rice to the skillet and stir-fry for 2-3 minutes, breaking up any clumps with a spatula. 7. Return the cooked chicken to the skillet and pour the soy sauce over the rice mixture. Stir well to combine all the ingredients. 8. Cook for an additional 2-3 minutes, allowing the flavors to meld together. 9. Remove from heat and divide the fried rice into two servings. 10. Garnish with sliced green onions, if desired.
