Greek Crumbed Chicken with Mozzarella and Tomato


Ingredients: - 3 boneless, skinless chicken breasts - 1 cup bread crumbs - 1/4 cup grated Parmesan cheese - 1 teaspoon dried oregano - 1/2 teaspoon garlic powder - Salt and pepper to taste - 3 slices mozzarella cheese - 1 large tomato, sliced - Fresh basil leaves, for garnish

Step by step process: 1. Preheat the oven to 400°F (200°C). 2. In a shallow dish, combine the bread crumbs, grated Parmesan cheese, dried oregano, garlic powder, salt, and pepper. 3. Pound the chicken breasts to an even thickness, about 1/2 inch (1.3 cm) thick. 4. Dip each chicken breast into the bread crumb mixture, pressing lightly to adhere the crumbs to the chicken. Make sure both sides are coated evenly. 5. Place the breaded chicken breasts on a baking sheet lined with parchment paper. 6. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through and the crust is golden brown. 7. Remove the baking sheet from the oven and place a slice of mozzarella cheese on top of each chicken breast. 8. Return the baking sheet to the oven and broil for an additional 2-3 minutes, or until the cheese is melted and bubbly. 9. While the chicken is broiling, slice the tomato and set aside. 10. Once the cheese is melted, remove the baking sheet from the oven and let the chicken rest for a few minutes. 11. To serve, place a chicken breast on each plate and top with tomato slices.
