Greek Chickpea and Chicken Pita Pockets


############# Ingredients: - 4 whole wheat pita pockets - 1 can of chickpeas, drained and rinsed - 2 medium tomatoes, diced - 2 chicken breasts, grilled and sliced - 1/4 cup of red onion, diced - 1/4 cup of fresh parsley, chopped - 1/4 cup of crumbled feta cheese - 2 tablespoons of olive oil - 1 tablespoon of lemon juice - 1 garlic clove, minced - Salt and pepper to taste

############# Instructions: 1. Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper, and grill for 6-7 minutes per side or until fully cooked. Once done, slice the chicken breasts into thin strips. 2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, and a pinch of salt and pepper to make the dressing. 3. In a large mixing bowl, combine the chickpeas, diced tomatoes, red onion, and chopped parsley. Pour the dressing over the mixture and toss to combine. 4. To assemble the pita pockets, gently open each pita pocket and stuff with the chickpea and tomato mixture. Top with the sliced grilled chicken and crumbled feta cheese. 5.
